For those wondering what “LMC” stands for, we can shed some light – at the risk of sounding even more confusing! This traditional cut of beef comes from the inside shoulder, lying below the chuck – and initials LMC mean “Leg of Mutton Cut”. It is also called the Thick Rib or The Runner and we find it makes a lovely slow roast, rather like the Chuck that we offer on this page. It can also be cubed or diced and used as a casserole meat, becoming extremely tender and delicious when slowly braised. We offer this joint in two sizes, 1kg and 2kg.
