Dry Aged Herdwick Mutton


Herdwick sheep are widely considered to be the most hardy of all Britain’s breeds of hill sheep. Herdwicks have a well-justified reputation for foraging ability even in the most difficult terrain. Many of them live their lives without receiving any supplementary feed.

They spend their lives happily grazing the hill tops on all the delicious heather, herbs, wild grasses and flora which is the perfect recipe for a tasty meat.

Mutton is sheep that are traditionally over 2 years old.

We have dry aged our Mutton for a minimum of 14 days which produces a richer, firmer meat that is so delicious and has a wonderful depth of flavour.
