Mangalitza Gammons

Mangalitza is a very old breed of pig. It is the cutest woolly pig to look at, but it tastes nothing like pork. It is a dark meat, marbled, juicy and very flavoursome. It is a slow growing pig and is not ready for slaughter until it is at least 18 months of age, during which time it not only gains its marbling akin to wagyu, it builds up a fantastic flavour.

We dry cure our Gammons here at Alternative Meats and the flavour is second to none. They have become one of our most popular products they are so good.

Preheat oven to 170 degrees (fan), place your joint in a roasting pan with a rack. Cover with foil and cook for 25-30 minutes per 500g plus 30 minutes.

For the final 30 minutes remove the foil, score the fat in a diamond pattern and cover with a glaze of your choice.

Rest for at least 20 minutes before carving ……. Enjoy!
