Wild Wood Pigeon (Oven Ready)

Little Birds! Surprisingly, once oven ready these are quite small – only enough for one single portion, but really full-flavoured with very rich, dark meat.
Beware the possibility of lead shot but its worth the risk … and they make equally good eating whether oven roasted, pan fried or casseroled.
