Packed with flavour and nutrient rich, duck hearts are an incredibly versatile and underused ingredient and much loved by our Chefs. They are lighter than the usual red meat offal and delicious pan fried or even on the BBQ for a quick supper.
You can add a few to stock to make a rich gravy or slice and sauté them and add mustard, cayenne pepper and cream to make a devilled sauce. Add a splash of Worcestershire Sauce to put a zing to the dish!
