The skin is removed from our Mangalitza as they have such a thick layer of fat, sometimes 2 to 3 inches thick.
We remove some of this fat so the fat to meat ratio is a perfect balance.

Although quite fatty, that is exactly what we love about Mangalitza and once you have tasted roasties cooked in this delicious fat we are sure you will understand why.
We make our Mangalitza Roasts without the skin but with a generous layer of fat which once slow cooked goes lovely and crispy.
We do offer the skin on the website if you really want to have some crackling but the crispy fat is just delicious.
