This particular cut was especially requested by a customer of ours from Argentina, where it is very popular. It is also known as “Jacob’s Ladder” in some countries. Ideal for slow roasting until the meat starts to fall of the bone then add a sticky sauce to it close to the end of cooking. Alternatively you can cook in a slow cooker on high for two hours, then turn down low for a further four hours and the results will be amazing. You can use a beef short rib recipe or even an Osso Bucco recipe, all will work really well and give excellent results.
