Mangalitza Pork Leaf Lard is virtually the same as suet from a beef animal. It crumbles in the finger tips and is especially fantastic in pastry.
Leaf lard specifically comes from the soft, visceral fat from around the pig’s kidneys and loin. As such, it has a very delicate, super spreadable consistency at room temperature and it should have an extremely delicate texture and flavour. It is good for whipping and using as a spread too, if you’re feeling “old school” !!
