We have previously won 2 Gold Stars in the Great Taste Awards for our Mangalitza Black Bacon, which used a generic treacle in the cure. After much research and further product development, however, we have now discovered some Pure Blackstrap Organic Molasses which we have decided to use during the curing process, and the difference is remarkable. Totally natural and unsulphered, there is a purity and a sweetness with these new molasses that was simply not present in our first productions. Unfortunately, this does mean that we have had to forego our hard earned Gold Stars — until we can enter the awards next year! An added bonus for us is that the new molasses are also Fair Trade, which we wholly support.
