Ideal for using in special dishes such as starters, paté or in a risotto, the chicken heart does not have an “offal” taste to it at all, but is very much like the flavour of the chicken itself. You can add a few to stock to make a rich gravy or slice and sauté them and add mustard, cayenne pepper and cream to make a devilled sauce. Add a splash of Worcestershire Sauce to put a zing to the dish!
