  • Beer Can Chicken - Or Guiness Fowl?! Or ever-so-pleasant Pheasant?!

    It did occur to us to suggest that you could use Guiness and Guinea Fowl for this recipe - just too much of a temptation! On the other hand, what an amazingly simple way of keeping a pheasant lovely and moist! However, the recipe is based on an ordinary everyday chicken and the result is so delicious that we thought it was too good to leave out of our SpiceNTice range. The instructions are all on the inside of the spice sleeve, and really are very easy and straight forward to follow - everything from the other ingredients you will need (which only number four!) as well as your bird of choice.     Here's an exciting option for Christmas Day!! A bird - in a bird - in a bird ... !!

    This is a lovely tasty combination of Gressingham Duck, Pheasant and Wood Pigeon. The duck is boned out, and then pheasant and wood pigeon fillets are combined in layers with stuffing between each layer. A gluten free orange and thyme stuffing is used, and the whole lovely parcel will comfortably feed between 8 - 10 people. It is simple to carve and this particular combination of meats is truly rich and delicious, and so attractive when served. The different colours of meat really compliment each other and the fattier duck on the outside bastes the leaner wild birds inside making cooking incredibly simple.     In times gone by, the Basque Cider Houses used to produce their wonderful cider and trade it with local beef farmers for The Galician Beef. This became quite a tradition and was a match made in heaven - as can still be experienced in Northern Spain. It wasn't a big step for the Cider Houses to begin to sell the meat alongside the Cider and open restaurants, and the Txuleton cut is a direct result of that pairing, being cooked on large open fires in front of the guests.
