Karl Martin Chef Patron of Old Downton Lodge near to Sunny Ludlow

Welcome to Alternative Meats - Deliciously Different

Karl Martin - Chef Patron of Old Downton Lodge

This very beautiful 18th Century Farmhouse is set in the lovely County of Shropshire, within easy travelling distance of Ludlow. Awarded no less than four AA Rosettes last year, the AA inspector has this to say : Excellent service and hospitality, allied with truly outstanding cooking".

The restaurant is expertly headed up by Karl Martin, Chef Patron, and is listed in the Michelin Guide. His menu evolves each month, and often involves our fantastic Welsh Wagyu beef. He has created a 7 course tasting menu as well as a 3 course Market Menu with a choice of 3 starters, 3 mains and 3 desserts.

Self-effacing Karl modestly attributes some of his success at Old Downton to the fact that a lot of the dishes he creates actually use products from Downton’s natural larder. Take the 70,000 pheasants and 30,000 partridges on the estate, not to mention the venison, teal, rabbit and mallard.   The chefs forage in Mortimer Forest for chickweed, wood sorrel, pennywort and wild garlic. The kitchen garden provides soft fruits and vegetables, together with locally harvested Downton Pippin apples. Sometimes, the produce comes to Martin, such as heather honey provided by his kitchen porter and used for the Welsh honey bread, served with sourdough and home-cultured butter.

Karl has come a long way since he was a 13 year old lad being a KP in his father's restaurant - he is now approaching 20 years of experience in this industry, having trained at Henley College in Coventry.   Since that time he has gained experience working in many different restaurants in the Midlandsworking with the likes of Peter Griffiths MBE, Simon Haigh F&B Director of the Eden Hotel Collection, Adam Bateman Group Executive of the Hotel Collection.
