Oven ready - all the hard work taken away! Traditionally roasted or casseroled, these birds are ideal for dinner parties or special meals.The Exception to the Rule on this page are the Poussin, which are sourced from a family run farm in France. The quality is unsurpassed and the birds are fresh frozen the same day that we receive them to encapsulate the full flavour.During the season, we have available such lovely game birds as Partridge, Mallard, Woodcock, Teal, Pheasant and Grouse for you to enjoy. As the stock from the last season is finally used, we will mark the birds "out of stock" here on the site until the next shooting season begins. If you are really desperate to get hold of stock, we do know several game dealers who keep frozen birds in large quantities, so please do email us to enquire.

  • Boned, Rolled and Stuffed Oven Ready Pheasant Min. 260g

    This bird has been prepared for you to oven cook (roast), and is what we would describe as "easy carve". It is boneless, stuffed with Wild Boar and Cider sausagemeat and topped off with streaky bacon, which will protect the breast beautifully during the roasting process.   • Game Roulade Min. 550g

    Our Game Roulade feeds 3 to 4 guests and is a perfect way to introduce game at the dinner table for the first time. We have layered pheasant and wild duck fillets with orange & thyme stuffing, rolled in locally smoked bacon. With no bones or waste, the roulade is great roasted in the oven and eaten either hot or cold. As a starter its hard to beat cold, finely sliced with some relish and garnish. The dark meat from the wild duck and the light meat from the pheasant make a lovely contrast on the plate. Carries cooking instructions with the packaging.   • Goose Breast Fillet (Packed Singly) Min. 300g

    What a fabulous way to enjoy goose without having to buy the whole bird! The skin covering keeps the lovely goose fat in place and you can score this and cook skin side down, which will produce some delicious fat for your roasties ... and, as it is high in mono-unsaturates it's healthy too!   • Hot Smoked Duck Breast Min. 150g

    These duck breasts are deliciously tender, lightly smoked in Cheshire and delivered to us fresh from the Smokery. Hot smoking is a cooking process and as such this product can be eaten cold, straight from the pack. It is a wonderfully sophisticated starter or canapé, thinly sliced with a light walnut dressing on baby leaves, or there are some lovely citrus salad recipes available. One fillet will easily make a starter course for two people. Amazing value compared with standard supermarket brands, and these fillets are from an artisan producer!   • Mallard (Oven Ready) Min. 400g

    Whole, oven ready wild duck is a real treat. You will find the meat dark and full of flavour, and one whole mallard will usually serve two people. The breasts are not as plump as farmed duck but make up for this with their gamey rich flavour. The Mallard is famously suited to a fruit sauce or jus, such as black cherry or orange and is a really good dish for the winter months. Learn More

  • Oven Ready Partridge (Brace of 2) Min. 480g

    The season for shooting partridge is 1st September - 1st February each year. The red-legged or french partridge is much more common than the grey legged variety. Learn More

  • Oven Ready Pheasant Min 500g

    This bird has been prepared for you to either oven cook (roast) or to joint up and place in a delicious casserole. We recommend covering with foil for the first twenty minutes - and cover the breast with some rashers of streaky bacon to keep it moist. Learn More

  • Oven Ready Young Grouse Min. 300g

    Traditionally commencing on the 12th August in Scotland, England and Wales, the Grouse shooting season continues until 10th December. This is our favourite small game bird and ideal for one portion serving. The meat is heavily perfumed with the heathers that these lovely little birds live and thrive on. Learn More

  • Poussin - Oven Ready - Pack of 2 - Min. 850g

    These wonderful little chickens are a fabulous portion for one, and can be stuffed and roasted just like a full sized chicken. Alternatively "spatchcock" the bird and thread a skewer through to roast on the barbecue or grill. Lovely with lemon and parsley, or simply baste with garlic butter. The birds are sourced from a family run farm in France, and we take delivery of the birds fresh, then we freeze down here in Shropshire to ensure optimum results for the table. Learn More

    We serve two of these delightful little birds, all oven ready and prepared on the bone, in one pack. One is sufficient for a slight supper or starter, you may need to serve two for those with a robust appetite.   • Wood Pigeon (Brace of 2) - Min. 440g

    Little Birds! Surprisingly, once oven ready these are quite small - only enough for one single portion, but really full-flavoured with very rich, dark meat. Beware the possibility of lead shot but its worth the risk ... and they make equally good eating whether oven roasted, pan fried or casseroled. We're now selling these by the brace, traditionally.
