GALICIAN BEEF

Our Galician Premium Beef is of the highest quality available from Galicia in the Northwest of Spain. The range is from retired dairy cows between the ages of 8 and 10 years old. This type of ageing allows for a natural grass-fed marbling of the meat of these fattened cattle, which yield a higher fat content and more marbling than cattle that are typically processed much younger in this country, say 2 years plus. The meat becomes quite dark and the fat is a deep yellow, giving the meat a distinctive and unique flavour. Although not a genetically produced result, the marbling is reminiscent of our lovely Welsh Wagyu Beef.We feel this is a lovely story and really like the extensive farming involved, which does very much complete the Dairy farming story, beginning with our British Rosé Veal calves, (which are ex-dairy bull calves), following the dairy life of the cow producing milk and more calves, right through to the cow retiring to pasture for a few years before her life comes to an end.

This is the "tail end" of the fillet, where the muscle naturally goes slightly narrower as on a fish, but it is no less tender of course.   • Galician Beef - Txuleton Steak Min. 900g

    In times gone by, the Basque Cider Houses used to produce their wonderful cider and trade it with local beef farmers for The Galician Beef. This became quite a tradition and was a match made in heaven - as can still be experienced in Northern Spain. It wasn't a big step for the Cider Houses to begin to sell the meat alongside the Cider and open restaurants, and the Txuleton cut is a direct result of that pairing, being cooked on large open fires in front of the guests.
