We are counting ourselves pretty lucky to now be a customer of Johnson and Swarbrick of Goosnargh - and it was by way of introduction from the lovely Nigel Haworth that we even managed to get a foot in the door! These fabulous birds have been the subject of so much attention over the years from top Chefs such as Nigel and of course, Paul Heathcote, that we were very keen to be able to supply them to all of our customers. Now at last we have a regular weekly order of Whole Corn Fed Ducks and Duck Breasts, and their wonderful Corn Fed Chickens, which come fresh to us.To have your duck or chicken delivered FRESH - simply order the Monday before you need it, and we will send it to you the following Monday, which you will receive on Tuesday morning of course.We will be keeping a frozen stock here in order to be able to supply if you have missed the order deadline.

  • Goosnargh Duck Hearts - Min. 250g

    Ideal for using in special dishes such as starters, paté or in a risotto, the duck heart does not have an "offal" taste to it at all, but is very much like the flavour of the duck itself. You can add a few to stock to make a rich gravy or slice and sauté them and add mustard, cayenne pepper and cream to make a devilled sauce.     Supplied from the Farm in Goosnargh, these wonderful Duck Legs are packed in two's and taste best braised in rich sauces, slow-cooked in casserole, or turned into luxurious confit. It is almost impossible to overcook them, so they are perfect for rich, slow roasting dishes.

    As with all the other duck products that we sell, the legs come from the beautiful ducks are hand reared on the family farm at Swainson House on the edge of the Ribble Valley, and have been since the 1960's.
