  • Mangalitza Dry Cured Gammon Min. 3kg **2 GOLD STARS GREAT TASTE**

    Using a traditional dry cure, we have taken the fabulously marbled Mangalitza Pork legs and created one of the best gammons that we have ever tasted! The meat is a dark ruby red and retains a lot of its succulence due to the amazing intra-muscular marbling, and of course the fat covering is absolutely delicious. Place your joint in a large plan of water and bring to the boil, discarding the water and refreshing the pan after that. We would recommend boiling the gammon for approximately 30 minutes / lb (or 1hr/kg) and then cool the joint for about 15 minutes. You can then score the fat into diamond shapes and it does look very attractive to stud with cloves in the centre of each square or diamond. A particularly tasty glaze can be made by simply combining a whole grain mustard and honey or maple syrup, spread over the ham and place it in a foil lined baking tin. It will usually take about twenty five minutes at 200C for the glaze to turn a beautiful golden brown and to fill the kitchen with the glorious aroma of baked ham!   • Mangalitza Pork Loin Steak Min. 170g

    Once you have tasted Mangalitza pork, the percentage of fat on a chop or steak will take on an entirely different meaning! It is important though to realise that all the rules are there to be broken when it comes to Mangalitza - which contains healthier fatty acids than ordinary pork, with 15 - 20% higher levels of unsaturated fat than for instance, the Duroc, a commonly used pig in the UK. The fat is softer, runnier, its melting point is lower and it is much easier to digest. This makes it a better food source as it does not burden the digestive system.   • Jack's Creek (Australian) Wagyu Beef Rib Eye Steak - Min. 300g

    Whether you are intending to suprise a loved one with a special treat, having guests around for a celebration meal or simply spoiling yourself, take a little time to get the cooking of this wonderful steak just right - you have to do it justice !   

    Cooking a Wagyu steak is not a perfect science, but there are a few pointers that are worth taking into account.  We would recommend pre-heating the pan and searing the steak for two – three minutes per side, followed by two or three minutes at a lower heat.  This will produce a lovely medium-rare result.   If you can, use a griddle pan, which will help to hold the steak above the melted marbling fat, and prevents a "poached" effect.    The fat should caramelise beautifully with a sprinkling of sea salt prior to cooking .... and there is no need to add any extra oil or butter, which would only serve to mask the wonderful taste of the beef.    

    Please don't forget to rest your steak prior to serving, which again is of course considered the best advice for a great result.

  • Jack's Creek (Australian) Wagyu Beef Sirloin Steak - Min. 300g

    Wagyu Beef, as described above, is one of the most intense eating experiences that you can enjoy - the unctuous, buttery, marbled steak will provide a real treat for any special occasion.  Wagyu Beef fat will melt at room temperature, so it is even more important to bring these steaks to room temperature prior to cooking, although we know that you know, this is best practice with any meat.    The second most important point is that the steak is rested prior to serving, which again is of course considered the best advice for a great result.    Please rest for as long as you have cooked !   

    We would recommend  pre-heating the pan and searing the steak for two – three minutes per side, followed by two or three minutes at a lower heat.  This will produce a lovely medium-rare result.   If you can, use a griddle pan, which will help to hold the steak above the melted marbling fat, and prevents a "poached" effect.    The fat should caramelise beautifully with a sprinkling of sea salt prior to cooking .... and there is no need to add any extra oil or butter, which would only serve to mask the wonderful taste of the beef.

    Such a special dish !! You can produce the most amazing centrepieces using this cut of hogget or lamb ... Often known as either a Guard of Honour or a Crown Roast. The latter is comprised of two or three racks joined together in circle, whereas the Guard of Honour is created by leaning two racks together and interleaving the cleaned, white rib bones to represent soldiers swords forming an arch.They take a very short time to cook, being made from what is known as the "best end" or loin of the hogget or lamb, and are very tender.     There are two deliciously tender Hogget Barnsley Chops in each pack - this lovely cut bears a Northern name (the clue is in the name, Barnsley which is in Yorkshire is in the North of England). Though a Barnsley chop is also known as a saddle chop, the name has stuck from its northern roots and become the definitive name for what is essentially a double loin lamb chop.Sometimes referred to as a saddle chop, as it is cut across the saddle, a Barnsley chop is taken from right across the loin, hence producing a double-sided chop.     Once you have tasted Mangalitza pork, the percentage of fat on a chop or steak will take on an entirely different meaning! It is important though to realise that all the rules are there to be broken when it comes to Mangalitza - which contains healthier fatty acids than ordinary pork, with 15 - 20% higher levels of unsaturated fat than for instance, the Duroc, a commonly used pig in the UK. The fat is softer, runnier, its melting point is lower and it is much easier to digest. This makes it a better food source as it does not burden the digestive system.   • Mangalitza Baby Back Ribs Min. 750g

    These packs of finger-licking, scrumptious ribs may contain one or two pieces, depending on the size of the Mangalitza we have used. You can prepare the ribs to any recipe that you would normally use, but remember that the meat will tastier, the fat will be meltier and the flavour will be more intense than anything you have had before!!
    When we tried them at home we popped them in the slow cooker for about 8 hours and then simply brushed them with the barbecue sauce (ingredients below) and finished them in the oven for half an hour. Don't have the heat up too high until the very end, or the sugar will burn. Then - added bonus - take your stock and make a delicious soup with the addition of peas or lentils!

  • Outdoor Reared Pork Belly Min.1kg

    We couldn't wait to present you this iconic and increasingly popular cut - and we have some great tips for achieving that amazing crunchy crispy crackling that everyone loves!

    1. Try placing the belly, skin side up, in the sink and pour boiling water over it (a kettle full). Then let it drain well and pat it completely dry before adding the rub.

    2. Use a good oil to rub all over the skin, (which has already been scored for you) and then rub a nice sea salt well in, getting down into all the cracks. You can add fennel seeds too if you like fennel.

    3. Get your oven nice and hot at about 220 Degrees C ...... and place the belly in a deep baking tin on top of roughly chopped vegetables such as fresh fennel, leeks and carrots. You need to place the belly in the oven at this temperature for about 15 - 20 minutes or until you see that crackling beginning to rise and bubble, going beautifully crisp.

    4. Once that process has taken place you can turn the oven down to about 160 Degrees C and leave the belly in for at least another two hours. You can test to see if it is ready after that time by pulling it with a fork to see if it comes away easily.


    The end result is sure to be fantastic and we just know you'll be a Food Hero in your own right after producing this dish for your friends and family! Learn More

    Just as described above, except this piece of belly weighs in at 2kg.. We couldn't wait to present you this iconic and increasingly popular cut - and we have some great tips for achieving that amazing crunchy crispy crackling that everyone loves!

    1. Try placing the belly, skin side up, in the sink and pour boiling water over it (a kettle full). Then let it drain well and pat it completely dry before adding the rub.

    2. Use a good oil to rub all over the skin, (which has already been scored for you) and then rub a nice sea salt well in, getting down into all the cracks. You can add fennel seeds too if you like fennel.

    3. Get your oven nice and hot at about 220 Degrees C ...... and place the belly in a deep baking tin on top of roughly chopped vegetables such as fresh fennel, leeks and carrots. You need to place the belly in the oven at this temperature for about 15 - 20 minutes or until you see that crackling beginning to rise and bubble, going beautifully crisp.

    4. Once that process has taken place you can turn the oven down to about 160 Degrees C and leave the belly in for at least another two hours. You can test to see if it is ready after that time by pulling it with a fork to see if it comes away easily.
