  • Beer Can Chicken - Or Guiness Fowl?! Or ever-so-pleasant Pheasant?!

    It did occur to us to suggest that you could use Guiness and Guinea Fowl for this recipe - just too much of a temptation! On the other hand, what an amazingly simple way of keeping a pheasant lovely and moist! However, the recipe is based on an ordinary everyday chicken and the result is so delicious that we thought it was too good to leave out of our SpiceNTice range. The instructions are all on the inside of the spice sleeve, and really are very easy and straight forward to follow - everything from the other ingredients you will need (which only number four!) as well as your bird of choice.     We are delighted to once again to be able to present our beautifully plump Free Range Geese bred by the Brisbourne Family in Nesscliffe, Shropshire, with whom we have worked for many years. The geese are reared free range, grazing fields adjacent to the old A5 which passes through Nesscliffe, they have become quite a local landmark. They graze and roam freely with ad lib supplements of home produced wheat (grown to Farm Assured standards), potatoes and a specially prepared corn ration, without the use of growth promoters and additives.At night the geese are brought indoors, for protection reasons, bedded down daily on fresh straw. Though sheltered at night they are still open to fresh air and natural light. All the geese grow naturally to reach full maturity.Brisbourne Geese are traditionally processed in December for freshness, and the weight range may vary but is always above 5.5kg.     A pork shoulder, as the name implies, comes from the upper front leg of the pig and is generally divided into two sections. At the top of the leg is a rectangular roast known in the U.S.A. as the butt or Boston Butt. Legend has it that this name comes from the packaging methods used to ship pork in Colonial America, when it was put into wood casks known as Butts.     Traditionally commencing on the 12th August in Scotland, England and Wales, the Grouse shooting season continues until 10th December. The grouse is our favourite small game bird and ideal for one portion serving. The meat is heavily perfumed with the heathers that these lovely little birds live and thrive on.

    Sadly, this year there has not really been a "Glorious 12th" as it is often called. The raging summer heat has been responsible for the killing-off of the main food source of young grouse, a small grub, and of course the terrible fires on the Moors have destroyed habitats. However, some shoots have still been able to function where they have had more rain, and in those instances they have been shooting the last year's growth of birds, rather than the usual "young" grouse. We have been pleased with the quality of birds so far although we are not sure how long we will be able to source them this year. Learn More

  • Tamworth Pork Belly - Min.1kg

    We couldn't wait to present you this iconic and increasingly popular cut - and we have some great tips for achieving that amazing crunchy crispy crackling that everyone loves!

    1. Try placing the belly, skin side up, in the sink and pour boiling water over it (a kettle full). Then let it drain well and pat it completely dry before adding the rub.

    2. Use a good oil to rub all over the skin, (which has already been scored for you) and then rub a nice sea salt well in, getting down into all the cracks. You can add fennel seeds too if you like fennel.

    3. Get your oven nice and hot at about 220 Degrees C ...... and place the belly in a deep baking tin on top of roughly chopped vegetables such as fresh fennel, leeks and carrots. You need to place the belly in the oven at this temperature for about 15 - 20 minutes or until you see that crackling beginning to rise and bubble, going beautifully crisp.

    4. Once that process has taken place you can turn the oven down to about 160 Degrees C and leave the belly in for at least another two hours. You can test to see if it is ready after that time by pulling it with a fork to see if it comes away easily.


    The end result is sure to be fantastic and we just know you'll be a Food Hero in your own right after producing this dish for your friends and family! Learn More

This particular joint is quite large, and will easily serve upto 15 adults.

    Place your joint in a large plan of water and bring to the boil, discarding the water and refreshing the pan after that. We would recommend boiling the gammon for approximately 30 minutes / lb (or 1hr/kg) and then cool the joint for about 15 minutes. You can then score the fat into diamond shapes and it does look very attractive to stud with cloves in the centre of each square or diamond. A particularly tasty glaze can be made by simply combining a whole grain mustard with honey or maple syrup, spread over the ham and place it in a foil lined baking tin. It will usually take about twenty five minutes at 200C for the glaze to turn a beautiful golden brown and to fill the kitchen with the glorious aroma of baked ham! Learn More
