So "Offal" is no longer in vogue .... at least not in the Supermarket. Well, our customers know much better and we are constantly asked for this delicious option - so much so that we have decided to create a whole new section dedicated to the "5th Quarter" ..... Our offal is mainly from our Rosé Veal calves, but also from lamb, mutton and goat and even venison.

Many old cook books carry recipes for roast heart ... it may not be a summer dish, but when stuffed and slowly basted it produces a most rich and satisfying dish. We recently made a casserole in the slow cook which was so rich and warming.
